Shannon's Apple Pie
My sister in law made this Apple Pie for dinner the other day and it was nothing less than amazing. She's a great cook and has some awesome recipes. But when it comes to creating paleo versions of your favorite foods, I've learned to be a little skeptical of them turning out like the real thing. This pie did not disappoint. And it had just the right amount of maple syrup so it didn't taste too sweet...just perfect! This is a great dessert for the holidays, gatherings or even a birthday if you want a healthy indulgence.
Ingredients:
-1 Jar of Honey Pecan Pie coconut butter
-1 lb bag of pecans finely chopped in processor
-4 honey crisp apples
-6 tbsp grassfed butter separated
-3 tbsp maple syrup
-1 tbsp cinnamon
- 2 tsp salt
Directions:
-Preheat oven to 350 degrees
-Cut up apples into small bit sized slices about 1/8" thick and sauté in a pan with 2 tbsp melted butter and cinnamon
-Cook on medium stirring often for about 10 minutes
-In a medium size bowl, mix crushed pecans with salt, maple syrup and 4 tbsp butter
-Press a little more than 1/2 the mixture into a pie placed up the edges for the "crust"
-spread half of the jar of softened coconut butter on top of the pecan crust
-add apple mixture
-add remaining half of the coconut butter over the apple mixture
-add remaining pecan crust on top
-bake at 350 for 30 minutes
She warned us that it might fall apart as we serve it, but it held together pretty nicely. We recommend enjoying with some homemade vanilla ice cream for the perfect treat!
