Maple Pecan Baked Apples
We are so excited for the Fall we couldn't help but start baking with apples and pumpkin flavors! This recipe is the perfect treat to celebrate the new season! The apple and Honey Pecan Pie mixture is soft and moist, just like a bite of apple pie, but better! For a nice indulgence, pair with some vanilla coconut milk ice cream and you'll have a five star dessert!
Yields: 3 apples Prep Time: 10 minutes Bake Time: 25 minutes Temperature: 350 degrees
Ingredients:
4 Medium size apples
2 Tbsp Organic Grass Fed Butter
Ground Cinnamon
1/3 Cup Nikki's Honey Pecan Pie Coconut Butter
Organic Maple Syrup (for drizzling)
1/4 Cup pecans, chopped
Directions:
Pre-heat oven to 350 degrees. Thoroughly wash and dry apples. Core and remove insides of 3 apples, leaving the bottom and sides intact (like you're carving a pumpkin). Tip: If you have a melon baller, use it for this part. It makes it quick and easy.
With the 4th apple, peel skin and cut into small pieces. The smaller the pieces the softer they will become in the oven. Toss diced apples in Nikki's Honey Pecan Pie Coconut Butter and mix well.
Place carved apples on baking sheet or glass dish. Make sure the baking pan/dish has sides. The apples may release some juices while baking. Divide butter among apples evenly, and add a pinch of cinnamon to each. Spoon apple/honey pecan pie coconut butter mixture into each apple evenly. Bake for 25 minutes at 350 degrees.
While apples are baking, roughly chop pecans. Top baked apples with maple syrup and chopped pecans to garnish.
Serve warm with a fun, fall inspired display and enjoy!
