Almond Flour Shortbread Cookies

Prep time: 35 minutes Cook time: 12-15 minutes Level: Easy
Ingredients:
- 2.5 Tablespoons unsalted butter
- 1.5 Tablespoons Nikki’s Coconut Butter, flavor of choice (We used Dark Chocolate Fudge for this one)
- 1 Tablespoons raw honey
- 1/8 teaspoon salt
- 1 cup almond flour
Directions:
Microwave the butter, coconut butter, honey, and salt for 60 seconds, or until just melted, stirring every 15 seconds. Be careful not to burn the butters. Pour melted mixture into a mixing bowl and add the almond flour, mixing with a wooden spoon until well-combined.
By spoonful, shape the dough into flattened disks. Place on a lined baking sheet 1.5 inches apart, and bake at 325o until the edges begin to brown, about 12-15 minutes. The centers will still be soft when you remove the cookies from the oven. Then, allow the cookies to cool completely before serving.
