Mango Mint Sorbet
This idea came to us after coming across this great article for 12 Ridiculously Addictive Coconut Butter Recipes. #5 on that list, suggested blending your favorite fruit with coconut butter, for an amazing dairy-free ice cream. Luckily for us, we had some frozen organic mango on hand from our last trip to Costco. With the addition of fresh mint, this is quickly becoming our new favorite summer treat.
For the Mango Mint Sorbet, all you need is 4 ingredients and a high speed blender or food processor. If you don't have frozen mangoes on hand, you can definitely replace it with a frozen fruit of your choice. You can even turn this into a post workout sorbet, by adding a couple tablespoons of collagen protein or a protein of your choice. And you didn't hear it from us, but this could easily become the perfect summer daiquiri with a couple shots of rum or tequila mixed in.
Ingredients:
3/4 Cup Frozen Mango
3/4 Cup Almond Milk or Liquid of Your Choice
2 Tablespoons Nikki's Coconut Butter (We recommend Vanilla Cake Batter for this one)
4-6 Leaves of Fresh Mint
Directions:
Place all ingredients in a high speed blender, Ninja, or Vitamix. Blend on high for 1-2 Minutes or until you have a creamy texture. If you prefer a thicker texture, put the finished sorbet in the freezer until solidified.
