Paleo Chocolate Chip Cookies!
This recipe has been around the block a few times! It is a variation of the Coconut Chocolate Chip Cookies we found on Juli Bauer's blog, PaleOMG! Coincidentally, Juli had gotten the recipe from another great blog, Stacey's Paleo Kitchen! Both Juli and Stacey had great things to say about the recipe so we had to try them ourselves! Here is our version featuring Nikki's Coconut Butter!

Ingredients:
4 eggs
1 Cup Dark Chocolate Chips
1 Cup Almond Flour
½ Cup Nikki's Coconut Butter (We chose Dark Chocolate Fudge and they were awesome!)
½ Cup Coconut Flour
½ Cup Honey
¼ Cup Coconut Oil
1 tsp Vanilla
¼ tsp Baking Soda
¼ tsp Salt
Directions:
Preheat oven to 375 degrees and line a cookie sheet with parchment paper
In a medium bowl, combine eggs, coconut butter, honey, coconut oil and vanilla. Mix well with beaters or whisk until the coconut butter is well blended. If coconut butter texture is dry and hard, microwave for 30 seconds before scooping it out of the jar.
Add the coconut flour, almond flour, baking soda and salt and mix well. Fold chocolate chips in.
Using a spoon drop little dollops (about 2 inches in diameter) onto the parchment paper and leave some space in between for them to spread out.
Bake for about 12-15 minutes or until the cookies are golden. Paleo cookies are not meant to taste this good!
