Nikki's Energy Bites
These energy bites were created by mistake and quickly became one of our favorite new treats. The crunchy oats pair so well with the coconut butter and cocoa nibs. How did we not come up with this idea earlier?! We love having these bites for post workout nutrition or as a perfect sweet bite after a meal!
Ingredients:
1/2 Cup Dark Chocolate Fudge (or other Nikki's Coconut Butter flavor)
2/3 Cup Gluten Free Oats
1/3 Cup Almond Butter
1/4 Cup Cacao Nibs (or chocolate chips)
1/4 Cup Maple Syrup
1 Tbs Chia Seeds
Directions:
-Place all of the ingredients in one bowl and mix
-Refrigerate about 20 minutes
-Tightly pack cookie scoop and drop onto parchment paper. This should make 12-15 bite size servings.
-Refrigerate for later or enjoy!
