Coconut Butter Coffee!
When we first started eating Paleo, my boyfriend Andrew found
this Bulletproof Executive blog, and a recipe for bulletproof coffee.
If you aren’t familiar with bulletproof coffee, let me fill
you in.
What makes this coffee so great is that Dave Asprey, author
of this awesome blog, adds butter to his coffee!! You may think butter sounds
weird, but it’s just like heavy cream, and is easier to find grass-fed butter, so it’s
better. He also adds MCT oil or coconut
oil, but we like to take things a step further so we usually add cinnamon to
the mix to create an awesome morning treat! It really is the best coffee EVER! And yes- it
is Paleo!
As usual we didn’t stop there though! We decided to try to one-up this delicious
coffee by replacing ‘butter’ with ‘coconut butter’. How clever of us?
One of my favorite things in the morning has always been waking up early to drink my coffee. But now, I REALLY look forward to waking up for Nikki’s Coconut Butter Coffee! If you don’t have a hand held blender, I suggest buying one, because it is the simplest way to make this and it’s easy to clean!
Ingredients:
-500ml of black coffee brewed (about 2 mugs)
-2 Tbsp of your favorite flavor of Nikki’s Coconut Butter (currently, mine is Honey Pecan Pie)
-1/2 tsp cinnamon (optional)
Directions:
-First brew your coffee the way you like it early in the morning.
-Pour all your coffee into a large cup or blender and add your coconut butter and cinnamon.
-Blend for about a minute with your handheld blender or in your regular blender. You should get a nice creamy head of foam on top!
-If you want, you can strain the coffee as you pour it into individual mugs.
-Sprinkle more cinnamon or raw cocoa powder on top (optional) for flavor!
-Enjoy!
