Macadamia Nut Cookie Crusted Mahi Mahi
We decided to be adventurous and experiment outside of desserts for this one. Of course, adding Nikki’s Coconut Butter to something already sweet will make it better, but we wanted to be a bit risky, and make something savory and different.
One of our favorite local restaurants, The Food Shack, is famous for making crusted fish, specifically their sweet potato crusted hogfish! We decided to re-create something similar with our Vanilla Cake Batter coconut butter, macadamias, and Mahi Mahi!
The result was DELICIOUS! Although, I have to say The Food Shack still has us beat!
Ingredients:
4 – 6 oz Mahi Mahi fillets (or a mild fish of your choice)
4 oz Vanilla Cake Batter Coconut Butter
1/2 Cup Macadamia Nuts
1 Tbsp Old Bay Seasoning
Salt and Pepper
Directions:
Preheat oven to 350 degrees.
In a food processor, lightly pulse the macadamia nuts until they're in small pieces, but be careful not to pulse too much and get a macadamia meal!
Mix in the macadamia pieces with the coconut butter in a medium size bowl.
Place the fillets on a large baking sheet, and gently spoon coconut butter onto each fillet. Using your hands, spread the coconut butter mix making sure most of the fish is coated.
Sprinkle the Old Bay evenly over each fillet. You can be more generous than 1 Tbsp if you really like the taste of Old Bay. It will form a nice sweet and salty combination with the coconut butter. Season each piece with salt and pepper as well.
Bake in the oven for about 15 minutes or until the fish is cooked through. Once it appears to be done, we suggest turning the oven onto broil and letting the top brown a little bit. This should take less than a minute or two.
